Season 3, Episode 06 – “Lemons And Blood Oranges”
Tom Kerridge is on the road in Sicily meeting producers who are as obsessed with growing ingredients as he is about cooking them. In his bespoke, vintage food truck he uncovers the secret history of Siracusa lemons, something you see on mosaics and statues all around the island, before uncovering how iconic volcano Mount Etna impacts the stunning colours of blood oranges. He then cooks up delicious dishes that celebrate these citruses. Near the historic port of Ortigia he learns how the lemons that are beloved on the island were the lifeblood of British global exploration before cooking up a delicious Victoria sponge with lemon curd and candied lemons. His journey then takes him to the Catania Plain to discover how the weather system created by Mount Etna gives the island’s blood oranges their distinctive coloration. After a hard day’s work Tom cooks a delicious roast chicken and fennel with blood orange vinaigrette to celebrate.
